New Recipe...

Focaccia Bread

Olive Oil with crushed red peppers for dipping...

You can see the herbs in the bread...

I also have one of these that has olive oil with garlic in it!  YUM!

Our new favorite bread...  Recipe below...

Focaccia Bread

First step Wet Ingredients:
I put this in a 2 cup measuring cup:
1 cup water
1 teaspoon sugar
1 pkg dry yeast (1 tablespoon)
1 teaspoon salt
1 tablespoon olive oil

Second step Dry Ingredients:
In a separate large bowl:
2 3/4 cups all purpose flour
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1 pinch black pepper

Topping ingredients:
Sprinkle of salt to taste
1 tablespoon grated parmesan cheese
1 cup mozzarella cheese

Note:  I used romano and cheddar, it's what I had...and I just grated it on til it looked right...
have a little extra olive oil to use for coating the pan and the dough...

First step:
Heat 1 cup water to 110 degrees, use a thermometer...
Stir in 1 teaspoon sugar, then dissolve 1 pkg (1 tablespoon) dry yeast and let sit for 10 min til foamy.  Add 1 teaspoon salt and 1  tablespoon vegetable oil to this mixture.

Second step:
Add this wet mixture to the dry ingredients and mix until it comes together.  Turn out onto a floured surface and knead until it becomes smooth and elastic.  Lightly oil a large bowl, place dough in the bowl and turn to coat with oil.  Cover with a damp cloth and let rise in a warm place for 20 min.

Third step:
Preheat oven to 450 degrees.  Punch dough down; place in 9" x 13" oiled pan or if you want it thicker, put in a 9" x 9" pan.  Brush top with olive oil.  Sprinkle with salt to taste, parmesan cheese and mozzarella cheese.  Bake in preheated oven for 15 minutes or til golden brown.

Fourth step:
Serve warm, dipped in the seasoned oil, and enjoy.

'Til next time,  Love ya,  Jean
